Forget those thin stringy strips of bacon, the team at South Perry Lantern are taking entire pork bellies, house curing them for 2 weeks, slowly smoking with competition pellets for 6 hours and cutting them 1/2 thick to finish them in four different ways to pair with 4 unique takes on a bloody mary!
1. Miso Maple Bacon Paired with a mini Miso Mary - House made Jalapeño mix, Vodka, topped with pickled okra, celery, roasted jalapeño, with a salty miso rim.
2. Elixir Garlic Fresno Bacon paired with a mini Sargent Pepper’s Mary - Top secret Bloody Mary mix, Vodka, topped with pickled onions and peppers, garlic stuffed olives with a cracked pepper and truffle salt rim.
3. Double Candied Bacon paired with a mini Sweet Maria - House made sweet and spicy Bloody Caesar mix, Tequila, topped with candied mango, pineapple chunks, roasted jalapeño, with a Tajin rim.
4. Black Pepper Truffle Bacon paired with a mini Dirty Clam Mary - House made Bloody Caesar mix, Dirty Dill Vodka, topped with pickled okra, peppers, onions, with a lemon sea salt rim.
