This dish was an upgrade of a classic dish my Dad used to make us when we were kids
Steak, Potatoes & Caramelized Onions
Starting with whole Prime New York strip loins, hand picked from Creekstone Farms, dry aged for a total of 50 days. This is much higher amount of aging than normally used. This will enhance flavor and the texture will be like butter.
Accompanying this bomb dry aged steak, we will pack some baby blue potatoes in flake sea salt and roast, caramelize and glaze cipollini onions in balsamico, and finish with a compound butter that will consist of roasted garlic, herbs, roasted bone marrow, and truffle shavings.
I personally will be shaving Perigord truffles table side and explaining the dish in person.
