Berbere Spiced Goat with roasted baby carrots, sea buckthorn & toasted hazelnuts
For this dish, I wanted to introduce sea buckthorn berries to compliment the roasted carrots in the dish. During the cooking process, the goat butter we add starts to brown and that helps the carrots release natural moisture, while adding a nice nuttiness. We also introduced a different flavor profile with berbere, an Ethiopian spice. Overall, I love bringing together ingredients that people are familiar with as well as ingredients that people are not so familiar with.
