Banh Mi is a Vietnamese sandwich. I think sandwiches are one of the best ways to enjoy a soft shell crab. When crisp-cooked, softshell crabs are bursting with tangy juices from my herb and spices and the pickled daikon and carrots. By surrounding the softshell crab with bread means more of its complex flavor makes it into your mouth instead of getting lost in the puddle of the plate.
