Us 80's babies watched our fair share of Looney Tunes growing up. Since roadrunners are about impossible to catch, why not braise up some wascally rabbit for an enchilada and create a fun carrot twist on mole.

Slow braised rabbit with a charred leek cream, carrot mole amarillo, root vegetable escabiche, veggie ash and manchego cheese.
