As a Houstonian growing up in a truly ethnically diverse community, I took for granted the wide array of options. Now living in Denver, a city my wife and I have called home for the past 7 years, I find myself longing for the flavors of Southern/Gulf Seafood. So on a recent trip back to the H, I decided to check out some of the Viet-Cajun seafood joints to conjure up some inspiration. The blend of smokey, cajun spices with the fresh flavors of lime, cilantro, lemongrass, and the roundedness of garlic, butter, and fish sauce make a holy matrimony that can not be denied.
So all this to say, with Crawfish season coming to an end, we're doing a Viet-Cajun Boil. The dish will consist of a pound of crawfish done Viet-Cajun style, with grilled corn on the cob, boiled potatoes, River Bear Texas Style Hot Link, and a fresh baguette to soak up all the goodies. Please Enjoy.
