bBd’s Presents: 6 Course Hitachiwagyu Dinner paired with Hitachino Nest / Kiuchi Beer & Sake hosted at Sparrow + Wolf.
Hitachiwagyu is only found in Ibaraki Prefecture in Japan (in a pristine agricultural zone about an hour north of Tokyo). This same prefecture is home to Kiuchi brewery who produces incredible sake and has also been producing craft beer for many years. Ralph Perrazzo has been actively building the relationships for Hitachiwaguyu beef in the U.S. and is happy to help one of his favorite brewer's Toshiyuki Kiuchi.
Toshiyuki, the owner of Kiuchi brewery has been working with the government of Ibaraki Prefecture to provide some of the local black wagyu cattle with the spent grain from his brewery. Toshi and the Ibaraki government have also been working together to begin exporting this special beef to the United States. In order to be classified as Hitachiwagyu, the meat needs to be classified as A4 or A5 Wagyu and originate from the Ibaraki prefecture. In short, this meat is literally the best of the best and has not been available outside of Japan until now. This is a huge deal.
This is a collaboration dinner with Chef Ralph Perrazzo of bBd's and five other local, high-profile chefs from Las Vegas. Each chef will produce one of the six courses.

There are only 35 tickets left for those individuals that have a love for high-quality beef and high-end beverages.
Only one other such event has been planned in the United States, in San Francisco, at Alexander Steakhouse which is also a very highly regarded restaurant. We were honored to have the opportunity to share this experience with our family in Las Vegas.
